Chocolates, Yum!

We have been playing with chocolate all day and got to make, and eat, some pretty yummy variations
I personally find chocolate making relaxing. You have to take your time with it, if you don't it will let you know who is the boss, not you.
We made a few different ganaches, like coffee, raspberry, caramel and good old fashion dark chocolate. Then we used colored cocoa butter to hand-paint some designs on the molds before casting them with some tempered chocolate. One very important tip is to make sure you have a well calibrated thermometer, it can ruin the look of your chocolates if it is giving you the wrong temperature
After casting the molds we filled them up with the ganache and finish them up with another coating of chocolate
I love this next step, tapping them of their mold! You get to see your efforts turned into pretty little morsels that taste awesome
These chocolates are for one of our lovely brides for this weekend wedding. She is putting them in little boxes as favors with their logo. Cute!
