PostHeaderIcon Petit Fours



This week we had lots of fun orders, pictures in blogs to come.
One of our favorite was for a bridal shower. The bride's sister wanted to have little heart-shaped Petit fours glace - Adorable- together with green and pink macarons and tartlets.
Everything looked very delicate and we just love making little pastries!

PostHeaderIcon Lace!

We had a great time this weekend going all around town and the mountains. One of our favorite weddings was this at the Hotel Boulderado in Boulder. The bride loved the lace on her dress and wanted to make it a big part of her cake.
The hotel has a sweet charm to it, with lots of dark wood and the amazing glass ceiling. The day was beautiful and we were able to enjoy a short walk along the river before heading back. Pictures of our other weddings to come!

PostHeaderIcon Pretty in Blue!




We love love love creating the goodies for this wedding!
The bride, Carrie, wanted to have shades of blue with white throughout the wedding including the cake and confections. The wedding was held at Devil's thumb Ranch in the Fraser Valley, and the background was stunning. I can't wait to see the pictures from the very talented Rachel from Stellar Photography

Each table had its own cake surrounded with jars filled with flowers from Pick me! The couple's cake was on a separate table with the confections which they used as favors. Hand made Hazelnut and light blueberry french macarons and fleur de sel chocolates.
The cake flavors were Lemon-raspberry and Vanilla with salted chocolate ganache and caramel buttercream.

This weekend we had a lot of pretty cakes. This cake certainly got our attention.

The couple Vanessa and Adam had their very nature inspire wedding at the Wild Horse Inn, surrounded by trees, wild flowers and singing birds.

PostHeaderIcon Finger dessert tasting




We had some great meetings this week and got the chance to make some cute little finger desserts and confections for a tasting with one of our lovely brides.

I am enjoying the process of putting this dessert table together, because we get to play with many ingredients and create all of it from scratch. Some of the yummy goodies we are planning on are meringue shells, vanilla and hazelnut, both topped with a fruit whipped cream, Lace cookie and cream rolls, eclairs, crunchy and creamy profiteroles, chocolate coated almond Florentine cookies, Hazelnut-chocolate meringue kisses, Hazelnut cream tartlets, Nougat and chocolate nougat, Mango and mixed berry fruit jellies, multicolored macaroons and more...

PostHeaderIcon Last few weeks


It has been a couple of very busy weeks. We have been traveling, for educational purposes of course! more of that later, and taking care of some great customers with meeting for weddings and some graduation goodies for high school and college.
Today i am finally caught up with emails, phone calls, contract writing and now getting back to my lovely blog.

I had the pleasure to go to the Notter School of Pastry arts in Orlando Florida to study with one of the best pastry chefs in the world, Stephane Glacier.

Mr. Glacier is a world pastry champion, has coached teams for competitions and holds the MOF tittle (Meilleur Ouvrier de France) which is the highest recognitions to craftsmanship in France. He also owns a pastry shop in Colombes, France.

The class was a blast and i would have love to stay a lot longer. Some of the most interesting parts of the class were the chemistry behind sugar work and how to apply those concepts to understand why certain technique or recipe isn't working and how to fix it. Extremely helpful information when trying to recreate any sugar confection or baked good at high altitude with a very dry atmosphere.
I am now confident to offer to our clients confections such Pate fruit (fruit jellies), Nougats, Marshmallows, Caramels, Nougatine, and much more. These are perfect as edible favors for weddings, or as part of a dessert table or a simple afternoon tea!

PostHeaderIcon Colorado Cakes!


We had a great time yesterday driving to Estes Park for a wedding cake delivery, the scenery was spectacular. It had just snowed that morning and the sun was out drying the roads. The trees were white, the sky was blue and near the road beautiful wildlife. We saw big horn sheep and little dear.
We got to our destination without a problem, with a 4 tier pale yellow cake with bright orange sugar Japanese lanterns


The cake flavors were Marble with chocolate whipped ganache and chocolate french buttercream, as well as, Pistachio lovers cake - the bride's favorite.
